Honey Strawberry Shortcake

- 15ml (1 tbsp) lemon zest
- A few mint leaves
Preparation
- In a bowl, mix the strawberries, sugar and lemon zest, if desired. Let sit 15 minutes in the fridge.
- In a second bowl, whip the cream, with a hand mixer, until soft peaks form.
- Add the honey and whip until firm peaks form.
- Cut the cake in half widthwise.
- Garnish the bottom of the cake with half the whipped cream and strawberries. Cover with the other half of the cake. Garnish with the remaining cream and strawberries. Decorate with mint leaves, if desired.
