Banana and Chocolate Pancakes

- 2 eggs
- 15 ml (1 tbsp) of canola oil
Steps
- In a bowl, use a fork to mash 2 bananas.
- Whisk in the milk and eggs.
- In another bowl, mix the flour with the baking powder. Make a well in the centre of the dry ingredients and gradually pour the liquid ingredients into it, whisking.
- Add the chocolate chips and let rest for 10 to 15 minutes.
- Heat the olive oil over medium heat in a frying pan. Pour in about 80 ml (⅓ cup) of batter per pancake. Cook for 1 to 2 minutes, until bubbles form on the surface. Flip and cook for 1 to 2 minutes. Keep in a warm place while you cook the rest of the pancakes.
- Cut the rest of the bananas and top the pancakes with them.
Side dish idea
Peanut Sauce
In a blender, add 125 ml (1/2 cup) milk, 80 ml (1/3 cup) crunchy peanut butter and 45 ml (3 tbsp) honey. Blend until smooth and creamy. Serve this sauce cold or hot.
