Homemade Strawberry and Raspberry Jell-O

Ingredients

  • 250 ml (1 cup) raspberries
  • 250 ml (1 cup) strawberries, sliced
  • 500 ml (2 cups) pomegranate juice
  • 1 packet (8 g) unflavoured gelatin

Preparation

  1. Place the berries in a pot, pour in the pomegranate juice and stir. Bring to a boil, and then remove from the heat. Let stand for 15 minutes.
  2. Use a fine strainer to drain the pot over a bowl. Discard the berries.
  3. Transfer 80 ml (⅓ cup) of the juice into another bowl. Add the gelatin to this bowl and stir. Let bloom for 5 minutes.
  4. Put the juice from the other bowl back into the pot. Bring to a boil over medium heat. Remove from heat.
  5. Heat the gelatin mixture in the microwave for 20 to 30 seconds. Pour into the pot and stir. Let cool.
  6. Divide the Jell-O into 6 to 8 glass dishes. Refrigerate for 5 to 6 hours, until the Jell-O is set.
