

Bacon and Gouda Steak Rolls

Steps
- Brush the steak slices with pesto.
- Place three slices of bacon and two slices of gouda on each steak slice. Cover with spinach and roll up the slices.
- Cut the rolls in half. Secure them with toothpicks.
- Heat a little olive oil in a frying pan over medium heat. Cook the rolls for 2 to 3 minutes on each side.

Bacon Topping
Heat a frying pan over medium heat. Cook 4 slices of bacon, cut into pieces, for 3 to 4 minutes, until crispy. Remove excess fat from the pan. Add 125 ml (1/2 cup) chopped shallots to the pan and cook for 30 seconds. Remove from the heat and add 30 ml (2 tbsp) cider vinegar, 60 ml (1/4 cup) olive oil, 30 ml (2 tbsp) maple syrup and 30 ml (2 tbsp) chopped parsley. Season with pepper and stir.
