Preparation
- Heat a little olive oil in a large frying pan over medium heat. Cook the chicken for 3 to 4 minutes.
- Add the vegetables and continue cooking for 3 to 4 minutes, until the chicken is no longer pink in the centre.
- Add the rice and continue cooking for 2 minutes, stirring.
- Add the soy sauce and the sweet chili mango sauce. Season with salt and pepper, and stir well.
