Chicken Skewers with Sweet Chili Yogurt Sauce

- 15 ml (1 tbsp) honey

- 10 ml (2 tsp) sriracha sauce
Preparation
- Thread the chicken cubes onto the skewers.
- In a bowl, mix the sweet chili sauce with the yogurt, mayonnaise, Dijon mustard, honey, and sriracha sauce if desired. Keep a third of the marinade in the refrigerator.
- In a baking dish, brush the chicken skewers with the remaining marinade. Cover and let marinate in a cool place for at least 30 minutes, ideally 8 hours.
- When ready to cook, preheat the grill to medium-high heat.
- Drain the skewers and discard the marinade.
- On the hot, well-oiled grill, cook the skewers for 8 to 10 minutes, turning them at the halfway point and brushing them with the marinade that was set aside in the refrigerator, until the chicken is no longer pink in the centre.

Avocado, Cherry Tomato and Bocconcini Salad
In a salad bowl, whisk together 10 ml (2 tsp) of Dijon mustard and 30 ml (2 tbsp) of red wine vinegar. Add 45 ml (3 tbsp) of olive oil, whisking. Add 1 diced avocado, 500 ml (2 cups) of cherry tomatoes of various colours, cut in half, ½ a red onion, chopped, 250 ml (1 cup) of bocconcini pearls, 15 ml (1 tbsp) of chopped basil and 5 ml (1 tsp) of chopped oregano. Season with salt and pepper.
