- 15 ml (1 tbsp) olive oil
- 45 ml (3 tbsp) parsley, chopped

- 2 green onions, chopped
Preparation
- Heat the olive oil in a frying pan. Cook the chicken for 1 to 2 minutes on each side.
- Sprinkle with fajita seasoning. Add the diced tomatoes and parsley. Bring to a boil and cook for 6 to 8 minutes.
- Place the tortilla chips in a baking dish and add the chicken. Cover with cheese.
- Bake for 3 to 4 minutes under the broiler.
- Garnish with green onions before serving if desired.
