Maple Balsamic Chicken Skewers

You can’t go wrong with maple and balsamic for delicious and flavourful chicken!
Also needed
- 10 ml (2 tsp) garlic, minced
Optional
- 30 ml (2 tbsp) fresh oregano, chopped
Preparation
- Preheat the oven to 205°C (400°F).
- In a bowl, mix the maple syrup, balsamic vinegar, garlic, and oregano if desired. Season with salt and pepper.
- Add the chicken and stir. Let marinate in the refrigerator for 1 to 2 hours.
- Drain the chicken and discard the marinade. Thread the chicken cubes onto the skewers, alternating with the onion and peppers.
- Place the skewers on a baking sheet lined with aluminum foil.
- Bake for 12 to 15 minutes, turning the skewers several times.
Side dish idea
Apple and Feta Arugula Salad
In a salad bowl, mix 60 ml (¼ cup) olive oil, 15 ml (1 tbsp) honey, 30 ml (2 tbsp) lemon juice and 30 ml (2 tbsp) chopped chives. Season with salt and pepper. Add ½ of a cucumber, diced, 2 sliced apples, 250 ml (1 cup) arugula and 200 g (about ½ lb) crumbled feta. Stir.
