Roasted Chicken Legs

Ingredients

4 chicken legs, skin on
30 to 60 ml (2 tbsp to 1/4 cup) El-Ma-Mia BBQ Chicken seasoning

For the barbecue sauce:

15 ml (1 tbsp) butter
1 chopped onion
1 chopped garlic clove
15 ml (1 tbsp) El-Ma-Mia BBQ Chicken seasoning
1 can (540 ml) of diced tomatoes
60 ml (1/4 cup) ketchup
30 ml (2 tbsp) brown sugar
30 ml (2 tbsp) rice vinegar
30 ml (2 tbsp) soy sauce
Salt and pepper, to taste

Preparation

  1. Preheat oven at 190 °C (375 °F).
  2. Rub the chicken legs with El-Ma-Mia BBQ Chicken seasoning.
  3. Place the chicken legs on a parchment paper covered baking sheet. Cook in the oven 40 to 50 minutes, until the meat is no longer pink and falls easily off the bone.
  4. While the chicken is cooking, melt the butter in a saucepan over medium heat. Cook the onion and garlic for 2 to 3 minutes.
  5. Add the El-Ma-Mia BBQ Chicken seasoning and cook for 1 minute, stirring constantly.
  6. Add the diced tomatoes, ketchup, brown sugar, rice vinegar, and soy sauce. Bring to a boil and let simmer at low heat for 12 to 15 minutes, until the sauce has thickened.
  7. Blend the sauce until smooth with a hand blender. Season with salt and pepper. Serve the sauce with the chicken legs.
