Ingredients
4 chicken legs, skin on
30 to 60 ml (2 tbsp to 1/4 cup) El-Ma-Mia BBQ Chicken seasoning
For the barbecue sauce:
15 ml (1 tbsp) butter
1 chopped onion
1 chopped garlic clove
15 ml (1 tbsp) El-Ma-Mia BBQ Chicken seasoning
1 can (540 ml) of diced tomatoes
60 ml (1/4 cup) ketchup
30 ml (2 tbsp) brown sugar
30 ml (2 tbsp) rice vinegar
30 ml (2 tbsp) soy sauce
Salt and pepper, to taste
Preparation
- Preheat oven at 190 °C (375 °F).
- Rub the chicken legs with El-Ma-Mia BBQ Chicken seasoning.
- Place the chicken legs on a parchment paper covered baking sheet. Cook in the oven 40 to 50 minutes, until the meat is no longer pink and falls easily off the bone.
- While the chicken is cooking, melt the butter in a saucepan over medium heat. Cook the onion and garlic for 2 to 3 minutes.
- Add the El-Ma-Mia BBQ Chicken seasoning and cook for 1 minute, stirring constantly.
- Add the diced tomatoes, ketchup, brown sugar, rice vinegar, and soy sauce. Bring to a boil and let simmer at low heat for 12 to 15 minutes, until the sauce has thickened.
- Blend the sauce until smooth with a hand blender. Season with salt and pepper. Serve the sauce with the chicken legs.
