These delicious scallops unveil all their flavours when grilled on the BBQ!
Preparation
- Preheat the grill to medium-high heat.
- Pour half of the vinaigrette into a bowl. Add the scallops, cherry tomatoes and red onion. Stir.
- Wrap 1 bacon strip around each scallop. Thread the wrapped scallops onto the skewers, alternating with the red onion wedges and cherry tomatoes.
- Cook the skewers for 2 minutes on each side on the hot, oiled grill. Serve with the rest of the vinaigrette.
