- 30 ml (2 tbsp) cornstarch
- 1 egg
Preparation
- Mix 250 ml (1 cup) of the flour with the baking powder and cornstarch in a large bowl. Season with salt.
- In another bowl, whisk the beer together with the egg. Gradually whisk in the flour mix.
- In a deep fryer or pot, heat the oil until it reaches 190°C (375°F) on a cooking thermometer.
- Coat the fish with the remaining flour and then fully coat the pieces in batter.
- Cook in the oil for 4 to 5 minutes, turning the fillets from time to time. Dry them on paper towels.

Spicy Tartar Sauce
In a bowl, mix 180 ml (¾ cup) mayonnaise with 30 ml (2 tbsp) chopped shallots, 15 ml (1 tbsp) chopped capers, 45 ml (3 tbsp) chopped parsley, 30 ml (2 tbsp) chopped pickles and 5 ml (1 tsp) sambal oelek.
