Provençal Tuna Casserole

Also needed
- 30 ml (2 tbsp) olive oil
- 1 onion, chopped
Optional
- 10 ml (2 tsp) fresh thyme, chopped
Preparation
- Preheat the oven to 205°C (400°F).
- Dice the peppers and zucchinis.
- Heat the oil in an ovenproof skillet over medium heat. Sear the onion for 1 minute. Add the diced pepper and zucchini. Cook for 2 to 3 minutes.
- Add the tomatoes, tuna, and thyme if desired. Bring to a boil.
- Remove from the heat and sprinkle with mozzarella.
- Bake for 12 to 15 minutes.
