Also needed
- 5 ml (1 tsp) brown sugar
- 15 ml (1 tbsp) olive oil
Optional
- 1.25 ml (¼ tsp) cumin powder
- 15 ml (1 tbsp) lime zest
- ¼ head of iceberg lettuce, chopped
Preparation
- In a bowl, mix the chili powder with the brown sugar, and the cumin and lime zest, if desired. Season with salt. Toss the shrimp with this seasoning.
- Heat the oil in a non-stick pan over medium heat. Sauté the shrimp for 2 to 3 minutes.
- Wrap the tortillas in a damp cloth and heat them in the microwave for 1 to 2 minutes.
- Garnish the tortillas with shrimp, avocado, Greek yogourt, and lettuce, if desired.
Side dish idea
Mexican Salsa
Dice ½ a red onion, 1 tomato and ½ a red pepper. Mix with 30 ml (2 tbsp) chopped cilantro, 30 ml (2 tbsp) chili sauce, 15 ml (1 tbsp) lime juice, 5 ml (1 tsp) minced garlic and 1.25 ml (¼ tsp) chipotle powder. Season with salt, and stir.
