- 125 ml (½ cup) flour
- 60 ml (¼ cup) olive oil

- 1 small jalapeno pepper, chopped
- 60 ml (¼ cup) cilantro leaves
Preparation
- Coat the sole fillets in flour and shake to remove the excess flour.
- Heat half of the oil in a frying pan over medium heat. Cook the sole fillets for 2 to 3 minutes on each side.
- Mix the tomatoes, corn, red onion, lemon juice, the rest of the olive oil, and the jalapeno pepper, if desired in a bowl. Season with salt and pepper.
- Serve the sole fillets with the salsa and garnish with cilantro leaves, if desired.
