Italian Sausage and Feta Stuffed Zucchini

Preparation
- Preheat the oven to 180°C (350°F).
- Scoop out the middle of the zucchinis with a spoon and coarsely chop the flesh.
- Heat the olive oil in a frying pan over medium heat. Cook the sausages, zucchini flesh and onion for 4 to 5 minutes, until the meat is well done. Drain.
- Remove the pan from the heat and add the diced tomatoes, feta, and oregano, if desired.
- Stuff the zucchinis with the sausage mix.
- Place the stuffed zucchinis in a baking dish, and pour the roasted red pepper coulis (see recipe below) into the bottom of the dish, if desired. Bake for 8 to 10 minutes.
- Bake under the broiler for another 2 to 3 minutes.

Roasted Red Pepper Coulis
Heat 30 ml (2 tbsp) olive oil in a pot over medium heat. Cook 1 chopped onion for 4 to 5 minutes. Add 15 ml (1 tbsp) minced garlic, 250 ml (1 cup) roasted red peppers, drained and minced, and 2.5 ml (½ tsp) chopped thyme. Cook for another 2 to 3 minutes. Use a blender to mix until smooth.
