One-Pot Beef Penne

- 1 onion, chopped
Preparation
- Heat a little olive oil in a large frying pan over medium heat. Cook the ground beef and onion for 5 to 7 minutes, breaking up the meat with the wooden spoon, until it is no longer pink.
- Add the penne noodles, tomato sauce and beef stock. Season with salt and pepper, and stir. Bring to a boil.
- Stir, and then cover and cook the pasta al dente for 15 to 20 minutes over low heat, stirring frequently and adding beef stock as needed.
- Top the pasta with fresh mozzarella before serving.
