- 60 ml (¼ cup) butter
Preparation
- Preheat the oven to 180°C (350°F).
- Cut the head of garlic in half and drizzle with olive oil.
- Wrap the garlic halves in a sheet of aluminum foil. Bake for 40 to 45 minutes. Remove from the oven and let cool.
- Remove 2 cloves of garlic from their skin and place them in a bowl. Mash them with a fork. Put the rest of the roasted garlic in the refrigerator to use another time.
- Melt the butter in a pot over medium heat. Cook the shallots for 1 to 2 minutes.
- Add the mashed roasted garlic and continue cooking for 1 minute.
- Pour in the cream and bring to a boil over medium heat.
- Add the parmesan and nutmeg. Stir until the parmesan is melted. Season with salt and pepper.
