Preparation
- Preheat the oven to 205°C (400°F).
- In a bowl, mix the salsa with the onion and corn.
- Place the mini peppers and pork chops in a high-sided baking dish lined with parchment paper. Pour the sauce onto the meat and mini peppers. Sprinkle with jalapeno, if desired.
- Bake for 25 to 30 minutes.
- Remove the dish from the oven and sprinkle with cilantro leaves.
