An all-in-one dish for those nights you’re feeling less than inspired! In this simple and tasty recipe, the flavours of pork, rice, vegetables and tropical fruit are combined for a sweet and savoury dish that will please adventurous palates.
Also needed
- 15 ml (1 tbsp) canola oil
- 1 onion, chopped
- 15 ml (1 tbsp) cornstarch
Optional
- 15 ml (1 tbsp) ginger, grated
Preparation
- Heat the oil in a frying pan over medium heat. Brown the pork for 2 minutes. Transfer the pork onto a plate.
- In the same frying pan, cook the peppers and onion for 2 to 3 minutes.
- In a bowl, whisk the orange juice with the soy sauce, cornstarch, and ginger, if desired. Pour into the frying pan and bring to a boil, stirring. Return the pork to the pan.
- Add the pineapple and let simmer for 5 minutes over medium heat.
Healthy choice
Contrary to popular belief, pork meat is low in fat and cholesterol. In fact, the fat in pork is located outside of the muscle, so it can be easily removed. Pork makes an excellent source of protein and phosphorus. It’s also rich in zinc, potassium and all eight B vitamins.
