Ingredients
- 1 cucumber
- 4 large tomatoes
- 1 green pepper
- 1/2 red onion
- 30 ml (2 tbsp) water
- 16 Kalamata olives
- 30 ml (2 tbsp) olive oil
- 1 container (200 g) feta
- 5 ml (1 tsp) dried oregano
- Pepper to taste
Steps
- Chop the cucumber and cut the tomatoes into wedges. Thinly slice the pepper and red onion.
- In a salad bowl, mix the vegetables with the water, olives and half of the olive oil.
- Cut the feta into four slices.
- Serve the salad on plates. Top each serving with a slice of feta. Sprinkle with oregano and drizzle with the rest of the olive oil. Season with pepper.

Cheesy Pita Wedges
Per serving: 110 calories
In a bowl, mix 10 ml (2 tsp) olive oil with 15 ml (1 tbsp) Greek seasoning, 15 ml (1 tbsp) lemon zest and 45 ml (3 tbsp) shredded Romano cheese (or mozzarella). Brush 3 pitas with the flavoured oil. Cut each pita into eight wedges. Place the pita wedges on a baking sheet lined with parchment paper. Bake for 8 to 10 minutes at 190°C (375°F).
