Thin Crepes

Ingredients
- 375 ml (1 ½ cups) 2% milk
- 250 ml (1 cup) flour
- 30 ml (2 tbsp) butter, melted
- 5 ml (1 tsp) vanilla extract
- 2 eggs
Preparation
- Place all the ingredients in a mixing bowl. Use an electric mixer to mix for 1 minute until smooth.
- Melt a little butter in a 20 cm (8 in) non-stick frying pan over medium-low heat. Pour in about 60 ml (¼ cup) of the crepe batter, tilting the pan in all directions so that the bottom is fully covered. Cook for 1 minute, until the edges of the crepe are golden-brown. Flip the crepe and cook for 30 seconds. Repeat with the remaining batter.
