Spinach and Mushroom Gnocchi

- 30 ml (2 tbsp) butter
- 1 onion, chopped

- 5 ml (1 tsp) garlic, minced
- 60 ml (¼ cup) parmesan, grated
Preparation
- Cook the gnocchi according to the instructions on the packaging in a pot of boiling, salted water.
- Melt the butter in a pot over medium heat. Cook the mushrooms with the onion and the garlic, if desired for 2 to 3 minutes.
- Add the cooking cream and the chicken stock. Season with salt and pepper. Bring to a boil.
- Add the spinach and gnocchi. Heat for 1 to 2 minutes.
- Sprinkle each portion with parmesan before serving, if desired.
